RDBA WEBINAR: Canned Beans Can Do: Plant-Forward Eating with Diabetes

As people with diabetes hear more about plant-forward diets, they are also wondering how to make them manageable, delicious and sustainable for themselves and their families. With an emphasis on one distinct plant food that has been nourishing humans for at least 8,000 years – the bean - this webinar will examine research related to the health benefits of beans, bean-centric and plant-forward diets, specific to people with diabetes. Attending retail RDNs will be empowered to better support their shoppers who are struggling with pre-diabetes, Type 1 or Type 2 diabetes. Blogger and Cookbook author, Mary Ellen Phipps, MPH, RDN, LD, will share strategies to determine which clients are best suited for a plant-forward diet and how to help those clients increase their plant consumption. In addition, Mary Ellen will present suggestions for incorporating the diabetes education into marketing materials so attendees can leverage and extend the valuable information provides. Featuring some of her favorite plant-forward recipes, she will prepare delicious diabetes-friendly dishes (from appetizers to desserts!) that will resonate with RDNs who counsel individuals with Type 2 diabetes, Type 1 diabetes, those who are looking to add more plants to their diet and beyond.

Presenter: Mary Ellen Phipps, MPH, RDN, LD
Mary Ellen is a media dietitian, blogger, and cookbook author from Houston, TX.  She was diagnosed with type 1 diabetes at 5 years old herself, and uses traditional media, social media, and her blog to help people with all types of diabetes bring joy back to their kitchens. She has a MPH degree in Epidemiology from The University of Texas Health Science Center at Houston and a B.S. degree in Nutrition Sciences from Baylor University. She is currently working on her PhD in Epidemiology at The University of Texas Health Science Center at Houston.
