Cook-A-Long: Fight Food Fatigue & Discover the Versatility of Pork
This past year has led even registered dietitians to hit a wall when it comes to finding and preparing new and nutritious mealtime ideas. Join registered dietitian, Cara Harbstreet, for this interactive cook-along to inspire your joy of cooking as she infuses new flavors and food trends into her food demo, while at the same time showing you how to put together a meal for your customers that provides a dining out experience. She will be joined by Coborn’s retail dietitian, Emily Parent, to share tips for how to bring to life a virtual cook-a-long for your customers in retail and how to leverage partners to make the business case successful. You are sure gain culinary insights, tips for hosting virtual events, gain insights for social media activations and be introduced to the versatility of pork in your kitchen. Presenters:
Cara Harbstreet, MS RD LD is a Kansas City based Intuitive Eating Registered Dietitian and nationally-recognized food and nutrition expert. She obtained a Bachelors of Science in Dietetics and Nutrition from Southeast Missouri State University. She went on to complete her Dietetic Internship and Masters of Science in Dietetics and Nutrition at The University of Kansas Medical Center. Upon completion, Cara worked in community nutrition, corporate wellness, retail settings. She later worked with the Endocrinology Department of a regional pediatric medical center and provided inpatient and outpatient support to children and families in the largest non-surgical specialty area. In 2016, Cara founded her private practice and began focusing on sports nutrition, intuitive eating, and applying the Health At Every Size model for clients in the Kansas City area. Since then, she has expanded into virtual and telehealth services and serves as a consultant and nutrition communications expert. Cara is also an active volunteer in the dietetics field, serving as a multi-year Board Member for the Kansas Academy of Nutrition and Dietetics. She is also the current Communications Director for the Sports, Cardiovascular, and Wellness Nutrition (SCAN) Dietetic Practice Group. 

Emily Parent, MFCS, RD, LD is a Registered Dietitian with a strong passion for championing nutrition and wellness. She has a diverse dietetic background in retail, e-commerce and wellness program development. In her position as Health & Wellness Manager for the St. Cloud, Minnesota-based retailer, Coborn’s Inc., Emily works closely with category managers, department leads and vendors to develop dietitian-backed omnichannel promotions. These partnerships have resulted in over 75 Minneapolis-St. Paul TV segments and have sparked innovations such as Coborn’s dietitian-approved meal kits. These meal kits led Emily to receive the Progressive Grocer Retail Dietitian Outstanding Innovation Award in 2017 and Retail Dietitian of the Year for both The Produce for Better Health Foundation and Retail Dietitian Business Alliance in 2019. Complimenting her work with various departments, Emily also helps lead Coborn’s wellness program which reaches it’s over 10,000 employees across 120+ locations. In addition to her work with Coborn’s, Emily also serves on the Academy of Nutrition and Dietetics Food and Culinary Professionals DPG board as the Supermarket/Retail Chair and is the current President for the Minnesota Academy Nutrition and Dietetics.
